Rotisserie Chicken Salad


When I tell you this recipe is soooo good it will quickly become a staple in your house…believe me! This will turn that left over rotisserie chicken from the supermarket into a lip smacking chicken salad in less than 15 minutes.

  • Rotisserie Chicken
  • Greek Yogurt
  • Mayo
  • Red Grapes
  • Celery
  • Green Onions
  • Salt & Pepper
  • Seasoning Salt

Here’s what you do:

You can make this in big or small batches, so I won’t give you measurements because it’s easy to adjust based on how much you want to make. Of course the bigger the batch, the more uses you can find for it. Serve it in sandwiches, salad greens or scoop it right out of the bowl.

Chop up the chicken and put it in a large mixing bowl, add a little mayo (about a teaspoon and two tablespoons depending on the size of your batch). Add Greek yogurt and stir. When you have the desired consistency. Add grapes (cut in half), celery (cut into small pieces), green onions (diced), and if you’re feeling a little adventurous add some almonds (sliced or slivered) or dried fruit (raisins, apricots, etc.) and add seasoning to taste.
